Tandoori Paste

You can certainly make tandoori paste at home, but it demands a certain depth in the spice rack. Here is one method:

ingredients

  • 2tbsp coriander seeds
  • 2tbsp cumin seeds
  • 2tbsp fenugreek seeds
  • 1tbsp black peppercorns
  • 1tbsp cloves
  • 1tsp cardamom seeds
  • 1/4cup paprika
  • 1tsp ground fenugreek leaves
  • 1tbsp ground cinnamon
  • 2tsp ground ginger
  • 1tsp cayenne pepper
  • Peanut oil
  • Spice grinder

procedure

Toast coriander seeds, cumin seeds, fenugreek seeds, black peppercorns, cloves, and cardamom seeds over medium-high heat for about a minute. Remove them from the heat, let them cool and grind them to a powder in a spice or coffee grinder. Mix with paprika, ground fenugreek leaves, ground cinnamon, ground ginger, and cayenne to taste. Mix with enough peanut oil to form a thick paste.
