Hummus

components
the important part
- 1/4 c fresh lemon juice
- scant 1/4 c water, plus ~1–2 T olive oil
- 1/3 c tahini* (use the solid rather than liquid measuring cups, so you get what you’re looking for; or, when in doubt, add more tahini!)
- 1 large or two medium cloves raw garlic
- 1/2 t salt
the rest
- 1 1/2 cups cooked chickpeas
procedure
combine the above in the food processor and turn it on. while running, begin adding home-cooked chickpeas. you’ll need about 1.5 cups cooked, but can add more or less if you want thinner or thicker.
slowly add chickpeas while the machine is running, by small handfuls. when done, let it keep running for a bit to ensure the hommus comes out really smooth.
best served spread on a platter, with paprika, olive oil, and chopped parsley. then scooped up with a spoon Into Your Mouth.
Actually, i really like to eat hommus with rice pilaf or rice salad.
