Colcannon

ingredients

  • 6 large irish potatoes, peeled and boiled
  • 6 spring onions, scallions, or chives
  • .25 pint milk or cream
  • 8oz boiled green kale
  • 2oz butter
  • 1tbsp chopped parsley
  • salt/pepper to taste

procedure

Mash potatoes finely. Chop onions and add to milk w/ salt/pepper to taste. Bring to a boil, then chop the kale and add to the mix, along with half the butter. Fold the potatoes and the butter/onion/kale mix together. Beat until light and fluffy. Serve with parsley and remaining butter.
