Alexs Cripple Bread

ingredients

  • 1 1/2 packets (3 1/2 tsp) active dry yeast
  • 1 1/2 cups warm unsweetened soy milk (use a brand whose ingredients are exclusively soybeans and water)
  • 1/8 cup honey
  • 2 eggs (I use duck)
  • 1/4 cup canola oil, plus some for greasing the pan
  • 1 T apple cider vinegar
  • 1 T xanthan gum
  • 1 1/2 tsp salt
  • 1/4 cup chickpea flour
  • 1/4 cup millet flour
  • 1/2 cup sorghum flour
  • 1/2 cup tapioca flour
  • 3/4 cup brown rice flour
  • 3/4 cup white rice flour

procedure

  • mix soymilk, yeast & honey in a medium-sized bowl
  • while you let this sit, mix all dry ingredients in a large mixing bowl
  • once the yeast, honey & soymilk mixture has a nice layer of foamy bubbles over the top, add the rest of the wet ingredients & mix together well
  • pour wet ingredients into dry and stir
  • cover the bowl of dough (which will be fairly wet in consistency, almost more like a batter) with plastic wrap and let rise for 75 minutes
  • preheat oven to 350 degrees
  • bake for 50 minutes
