Alexs Cripple Bread

ingredients
- 1 1/2 packets (3 1/2 tsp) active dry yeast
- 1 1/2 cups warm unsweetened soy milk (use a brand whose ingredients are exclusively soybeans and water)
- 1/8 cup honey
- 2 eggs (I use duck)
- 1/4 cup canola oil, plus some for greasing the pan
- 1 T apple cider vinegar
- 1 T xanthan gum
- 1 1/2 tsp salt
- 1/4 cup chickpea flour
- 1/4 cup millet flour
- 1/2 cup sorghum flour
- 1/2 cup tapioca flour
- 3/4 cup brown rice flour
- 3/4 cup white rice flour
procedure
- mix soymilk, yeast & honey in a medium-sized bowl
- while you let this sit, mix all dry ingredients in a large mixing bowl
- once the yeast, honey & soymilk mixture has a nice layer of foamy bubbles over the top, add the rest of the wet ingredients & mix together well
- pour wet ingredients into dry and stir
- cover the bowl of dough (which will be fairly wet in consistency, almost more like a batter) with plastic wrap and let rise for 75 minutes
- preheat oven to 350 degrees
- bake for 50 minutes
