I forget how to do this all the time, so I’m sticking the command here.
$ sudo /System/Library/CoreServices/RemoteManagement/ARDAgent.app\ /Contents/Resources/kickstart -activate -configure -access -on -users admin \ -privs -all -restart -agent -menu
will enable screen sharing for all admin users. More specific options are available from the kickstart command’s -help option.
